10 minutes

Cook:

Ingredients:
  • 2 ears of corn, roasted
  • ¼ cup ONOIN Jalapeño Lime
  • 1 clove of garlic, minced
  • 1 jalapeño, minced (optional)
  • ¼ tsp cumin
  • ¼ tsp smoked paprika
  • ¼ tsp chili powder
  • ¼ cup cotija cheese
  • ¼ cup cilantro, finely chopped
  • 1 lime, juiced
  • Salt to taste
Preparation:

This creamy, smoky, tangy Elote Dip is everything you love about Mexican street corn — in a bowl. Made with roasted corn, fresh lime, cotija cheese, and a generous pour of ONOIN Jalapeño Lime, it comes together in minutes and disappears even faster. Perfect for game day, backyard cookouts, or any time you need a crowd-pleasing dip.

  1. Roast your corn until charred and fragrant — on the grill, under the broiler, or directly over a gas flame works great.
  2. Once cooled, cut the kernels off the cob and add them to a large mixing bowl.
  3. Add the ONOIN Jalapeño Lime, minced garlic, jalapeño (if using), cumin, smoked paprika, chili powder, cotija cheese, cilantro, and lime juice.
  4. Mix everything together until well combined.
  5. Taste and season with salt, adjusting any other ingredients until it tastes perfect to you.
  6. Garnish with any leftover corn kernels and a sprinkle of extra cotija or cilantro.
  7. Serve with corn chips and fresh vegetables. Enjoy!

Pro Tips:

  • Make it spicier: Add extra jalapeño or a pinch of cayenne.
  • Make it ahead: This dip gets even better after 30 minutes in the fridge as the flavors meld together.
  • No cotija? Feta cheese makes a great substitute.
